What You Will Need 

  1. A small saucepan.
  1. A small bowl.

iii. A source of heat.

Ingredients 

  1. 3 oz. organic cremini mushrooms.
  1. 2 organic eggs.

iii. ½ lb. organic kale.

  1. 1 organic yellow onion.
  1. ½ lb. fresh loose mild Italian pork sausage.

Directions 

Step 1: Wash the fresh produce before use.  

Step 2: Cook the eggs;  

  1. First, fill the saucepot half to three-quarters full with water.
  1. Then, turn on the burner and bring the water to a boil over high heat.

iii. Next, fill the small bowl with ice water.  

  1. Now, lower the eggs into the boiling water carefully and cook for about 6 to 10 minutes.
  1. After that, transfer the boiled eggs to the ice water to cool.
  2. Thereafter, peel the eggs carefully.

Step 3: Meanwhile, prepare and cook the sausage;  

  1. First, remove the sausage from the packaging, transferring it to a plate.
  1. Next, pat the sausage dry with the paper towel.

iii. Now, warm 2 tbsp. olive oil until hot enough in the large frying pan over medium heat. 

  1. Then, add the sausage and cook until browned and cooked through, making sure to stir frequently to break up the meat.

Step 4: Meanwhile, prepare the vegetables; 

  1. First, peel and coarsely chop enough onion to measure 2 cups.
  1. Now, peel the carrot and trim the ends.

iii. Next, cut the peeled carrot in half lengthwise, then crosswise into 1-inch-thick slices.  

  1. Then, cut the mushrooms into quarters.
  1. Thereafter, strip the kale leaves from the stems.
  1. After that, thinly slice the leaves crosswise.

Step 5: Cook the vegetables;  

  1. First, chop the yellow onion into ¼-inch slices.
  1. Next, chop the carrot into ¼-inch cubes.

iii. Then, thinly slice the kale.  

  1. Now, dry the same pan you used for the sausage.
  1. Then, add 2 tsp. olive oil to the pan and heat the oil over medium heat until hot enough.
  1. Next, add the onion slices you created earlier to the oil.

vii. Now, season the onion slices with salt and pepper, and cook while stirring occasionally, until starting to soften, or for about 3 minutes. 

viii. After that, add the carrot cubes you created earlier to the onion-pepper-salt mixture and cook, while stirring occasionally, until just tender, or for about 2 minutes.  

  1. Afterwards, add the mushrooms and continue to cook the mixture while stirring occasionally, until starting to soften, or for further 3 minutes.
  1. Thereafter, stir in the marinara sauce, sausage, and kale, cooking the mixture on low heat for a further 2 minutes, or until the kale is just wilted and the marinara sauce plus sausage are heated through.
  1. Then, remove the pan from the heat and season the content to taste with salt and pepper.

Step 6: Finish the eggs; 

  1. Cut the eggs in half lengthwise.
