Ken’s Famous Baked Beans with Smoked Rib Tips

 

Garlic Lovers Smoked Rib Tips with Beans, I love these beans; everyone who has ever tried them has, too. They are even good cold. I have been working on this recipe for 30 years or so now. I added a lot more garlic than in the beginning, but we like garlic more now. When I make them I don’t use a recipe or measure anything, I just do it and it’s always awesome. Most times I cook them on the grill; here they are on the Louisiana LG 700 Wood Pellet Grill/Smoker. I usually put them in a cast iron Dutch oven. But, all you need is something oven safe.

But today I thought I would put a different spin on them. I was playing with my new Louisiana Cold Smoke Sidebox and did some ribs and tips. It is already way too hot here to even think about cold smoking so I thought I would see how it did ribs. Keep in mind that “It is a Cold Smoker” and not made for “Hot Smoking” so if you use it for that understand there is a potential for grease build up and possible grease fires.

Prep Time: 15 minutes
Cook Time: 2 hours at 325* (162c)
Grill: Louisiana LG 700 Grill/Smoker
Pellets: Green Mountain’s Texas Blend BBQ Pellets

Ingredients: Garlic Lovers Smoked Rib Tips with Beans

  • 2 lbs. shredded smoked rib tips
  • ½ lb. bacon
  • 1 large sweet onion, chopped
  • 3 1 lb. cans of baked beans (We like Bush’s brand.)
  • 1 Tbsp. minced garlic (now I also add about 2 cups of peeled garlic cloves)
  • ½ Tbsp. Liquid Smoke
  • 1 cup brown sugar
  • 3 Tbsp. Worcestershire sauce
  • 2 Tbsp. prepared mustard

Note: Any bean will do…
But, keep in mind that the better bean you start with, the better the bean you’ll end with.

Directions: Rib Tips

I smoked my rib tips for 2 hours at 225* (107c) then pulled them out of the smoke box and put them into a crock pot for another 6 hours. When they were very tender I pulled them like you do pork butt, cleaning all the little bones and cartilage out.

Note: Any bean will do…
But, keep in mind that the better bean you start with, the better the bean you’ll end with.

Cut your bacon strips into 2 or 3 pieces and sauté the onions and garlic with the bacon until tender in a large Dutch oven. Now add the rest of the ingredients and mix well.

Preheat the grill to 325* (162c). Place everything directly onto the grill uncovered and just let it hang out in the smoke and get happy for 2 hours or so. You’re done when the beans are nice and thick….

Tip: Cut the bacon about 2” long with kitchen shears before cooking.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
