Cranberry Apple Bacon Jam, I was wanting a stuffing for a Christmas pork loin.
Not the Ho-Hum, same old, same old stuffing.
But something different. I can say that Patti and I knocked it out of the park with this one! It is so good, but everything is better with bacon!

Our bacon jam has a pound of bacon slow cooked with apples, smoked onions, cranberries cooked in to a sweet and spicy bacon jam. Rich and savory with a little sweet and tart at the same time. A great stuffing for pork or an appetizer, topping on cheese and crackers. Awesome on scrambled eggs or toast with your morning coffee.

You’ll be tempted just to eat it with a spoon.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
 

Prep Time: 10 minutes
Cook Time: 30 minutes

 Ingredients: Cranberry Apple Bacon Jam

  • 1 lb. bacon, cut pieces
  • 1 large, sweet onion, diced and smoked
  • 1 can whole berry cranberry sauce
  • 1 large apple, chopped
  • 2 cups dried cranberries

Cold Smoked Onions, Baloney & Pork Loin with a Smoke Daddy Cold Smoker


NOTE
: I cold smoked my diced onion a few days before I needed it here, you can do this with a regular onion.

 Cut up your bacon and apple and set aside.

Place the bacon into a skillet and cook until crispy. Use a slotted spoon and place the bacon onto a paper towel, reserving about a tablespoon of bacon fat in the pan.

Add onions and apples and cranberries to your skillet and sauté in the bacon drippings, stirring often until they start to caramelize. (10-15 minutes)

Stir in the cranberry sauce along with the cooked bacon.

Stirring often continue cooking until the liquid reduces and it thickens to your taste. About 10 to 15 minutes.

Remove from heat, let cool and grab a spoon!

TIP: Place the bacon into the freezer for 20 minutes or so to firm it up before chopping. Makes it an easy job…

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
