Cocoa Chile Chuck Roast, I have been wanting to smoke a chuck roast so Patti got this one for me. Thinking I would do a Cocoa Chile rub with garlic and pepper for a crust. I picked up some of Louisiana Grill’s “Tennessee Whiskey Barrel“wood pellets to try out. Zero added alcohol, tons of added flavor. About 5 hours in the smoke and we are ready to eat.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

The Art Of BBQ: Beef on the Wood Pellet Grill
Prep Time: 5 minutes
Cook Time: 5 hours @ 225 * (110c)
Grill: Louisiana Wood Pellet Grill
Pellets: Tennessee Whiskey Barrel by Louisiana Grill
Ingredients: Cocoa Chile Chuck Roast
- Large chuck roast
- Crushed black pepper
- Dried crushed garlic
- McCormick Cocoa Chile Blend
- Dr. Pepper, or substitute beef broth or red wine
- Worcestershire Sauce
Directions: Cocoa Chile Chuck Roast
Put a good dusting of the cocoa chile rub on the roast and work it into the meat with your fingers. (I keep Worcestershire sauce in a spray bottle for when I want to add a little moisture to things, plus it helps seasonings stick on your meat.) Spray a little Worcestershire onto the meat and put a thick coat of pepper and garlic on the roast to make a nice pepper garlic crust when it’s done. Then onto the Louisiana Wood Pellet Grill/Smoker for a quick sear.
After the sear I put it in a foil pan with about an inch of Dr. Pepper for a little added flavor and moisture as it cooks. Turn the temp down and smoke for about 5 hours at 225 degrees (110c) until you reach an internal temp around 190 degrees (87c). Then, pull it off the grill and let it rest for 5 to 10 minutes before you serve. It will cut like butter and be really juicy.

Cooking Directions: Louisiana Wood Pellet Grill
To prepare the grill for cooking, check your pellet supply – top off or change flavors as needed. Scrape grill grates off. Turn the “Feed Control” High and press the “Start” button. Give the grill about 15 minutes to reach temperature and the grates to burn clean.
Slid the door open for the Louisiana Wood Pellet Grill “open Flame” for a quick sear. All you need here is a few minutes for each side. You don’t have to do this but it does add another layer of flavor.
So after the grill comes up to temp and you do your sear turn it back down to low. This will be around 225 degrees (110c). Place everything directly onto the grill and just let it hang out in the smoke and get happy for about 5 hours or so. This is referred to as “Smoking” or “Hot Smoking”, the temperature is 225 degrees (110c). When the meat reaches an internal temp of 190 (87c) pull it off, cover it and let it rest for 10 minutes before serving. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
