Carnitas Margarita Style was better than GOOD it was a fiesta for the senses!
Carnitas Margarita Style with a “Kiss of Smoke” on our Green Mountain Grill smelled wonderful throughout the neighborhood. This was a big Dutch oven recipe and we had more than a few dinners this week. We served them as soft tacos and over rice, plus sharing with neighbors.
A splash (or two) of Tequila mixed with Margarita mix for a citrus kick was our sauce base. Just a little spicy with a whole lot of southwestern flavor. I think I’ll do this one for our next monthly Taco Tuesday pot luck dinner.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 20 minutes
Cook Time: 3 hours at 350* (177c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Fruitwood Blend BBQ Pellet
Ingredients: Carnitas Margarita Style
- 7lbs. boneless pork sirloin, cut into large cubes
- 1 cup cilantro, chopped
- 3 large fresh jalapenos, chopped
- 3 large sweet peppers, chopped
- 3 chipotle peppers in adobo sauce, chopped
- 1 large sweet onion, chopped
- 1 large handful peeled garlic cloves, to taste
- 1 cup Tequila Gold, or to taste
- 2 cups liquid Margarita mix
- 2 cups chicken stock
- 2 Tablespoons Cindy Lou’s Chile Lime Seasoning
- 1 teaspoon sea salt
- 2 Tablespoons red pepper flakes (optional)
- Olive oil for browning

Cooking Directions: Carnitas Margarita Style
Cut the pork into cubes, I like to do 2-inch cubes. Season well with your Cindy Lou’s Chile and brown pork cubes in hot oil. I used a large Dutch over for this, browning a few at a time, then removing them to do some more until they’re all done.
After browning all the pork turn the heat off and add all the pork back into your Dutch oven. Add all the remaining Ingredients mixing it well and you’re ready for the grill.
Preheat the grill to 350* (177c), because there is little to no smoke above 250* I loaded a wedgie for that “Kiss of Smoke”.
Place your Dutch oven directly onto the GMG for 3 hours giving it a stir every hour or so. It really is that easy…
I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
