Prep Time: 5 minutes Cook Time: 20 minutes @ 400 degrees (205c) Grill: Green Mountain Wood Pellet Grill Pellets: Green Mountain’s Texas Blend BBQ Pellets
Ingredients: Bacon Wrapped Grilled Onion Slabs
- Large sweet onion sliced 1 inch or more thick
- Thick sliced bacon, (I like pepper bacon)
- Chef of the Future Southwest Seasoning
- Butter
- Tooth picks

Directions: Bacon Wrapped Grilled Onion Slabs
These are super simple. When I have the time I’ll just smoke for an hour or so before adding any heat to the grill. Then, I grill them for about 20 minutes at 400 degrees (205c). I give them a quarter turn at 5 minutes then flip them at 10 minutes. Cooking times will vary due to how thick you sliced your onions. I like the onion with a little firmness to it so basically you are cooking the bacon to your liking. I just season them and then put a dab of butter on them both at the beginning and end of the cook.
I like to use large sweet onions and slice them about 1 inch thick. Then wrap then with thick sliced pepper bacon but use what you like. It takes about 2 slices of bacon to go around one of these onion slices. Wrap the bacon around your onion and secure with the toothpicks. Season them add a pat of butter and you’re ready for the grill.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
