
Smoked Corned Beef, and Smoked Corned Beef is Pastrami!!! Patti found corned beef on sale for $1.69 a pound. To say the least she bought a load of them for the freezer. So, we are going to enjoy smoking them for awhile. This is the first one we have ever smoked and it was fantastic. We also cored a head of cabbage and stuffed it with sweet onions, garlic and melted butter then smoked it along with a skillet of red potatoes.

1 corned beef brisket, this one was 4 lbs.

Directions: Smoked Corned Beef
This is amazingly simple for how good it was. You just take the corned beef out of the package rinse it off and do a hot sear on the grill.
Sear at 400 degrees (205c), about 6 minutes per side with a quarter turn at the 3 minute mark. Then turn the grill back down to 225 degrees (107c). Place your corned beef in the pan directly onto the grill and just let it hang out in the smoke and get happy for 2 hours or so. This is referred to as “Smoking” or “Hot Smoking”, the temperature is 225 degrees (107c).
I smoked it for 2 hours @ 225 degrees (107c). Then I covered it with foil added the cabbage and potatoes to the grill for another hour. Looking for an I.T. of 200 degrees (94c).
After an hour cover the cabbage and increase the heat to 300 degrees (149c) for 30 minutes.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.
