I recently assembled my Monument Mesa II 415BZ grill, which was straightforward and well-built. This compact model offers versatile features: it works as a grill, a light smoker with the Smoke Box, or as a flat-top griddle by swapping the grill grates for griddle plates. Adding a pizza stone or rotisserie expands its cooking options even further.
This unit includes four front-to-back burners, a “cavity-style infrared broil zone” that heats to 700–800°F for fast searing, and a 12,000 BTU side burner. One-handed piezo ignition enables quick, battery-free startup, while 304 stainless steel burners deliver efficient performance.
This compact grill offers many features and is built from stainless steel to prevent rust.
The pegboard design on the sides and inside the door lets you arrange accessories as needed. The grill includes five hooks for BBQ tools. Visit Monument’s website to find more accessories, like a trash bin, paper towel holder, and pizza stone rack.
I love this little grill and thought I would put it to the test by doing some hickory smoked chicken rotisserie chickens. Real simple using Monument’s smoke box I’ll put a recipe for it on the bottom of this page.

Rotisserie chickens with a Kiss of Smoke
I love the flavor cold smoked cheese and pork chops. Doing a 5-hour cold smoke on the chops! I then refrigerate the chops for a few days before grilling them for great results. After sharing these at a Men’s group, I’ve become the master cook for all of our gatherings.

The Mesa II comes with durable cast iron grates and include a unique “cavity-style infrared broil zone” on its right-side burners, which provides a powerful searing flame that reaches up to 10,000 BTU.
The cast iron cooking grates have four main burners: two left burners at 8,500 BTU each and two right “Broil Zone” burners at 10,000 BTU each. Total cooking area is 405 sq. in.
In the Broil Zone, the two burners let you dial in heat just the way you want, the black zone for everyday cooking (8,500 BTU). And the red zone cranks up the heat for that perfect sear (10,000 BTU).

COLD SMOKING
Monument’s “Smoke Box” simplifies cold smoking giving your food a Kiss of Smoke and adding another layer of flavor. Perfect for cheese and especially for recipes using cheese. There is no heat when Cold Smoking.
Just fill the smoke box with pellets or wood chips and light it with a torch and lay it in a cold grill.
HOT SMOKING
NOTE: “Hot Smoking” is done between 175*F / 275*F.
Hot smoking occurs between 175°F/275*F and higher, with adjustable heat with our front-to-back burners and individual controls. With the Monument Mesa, you can smoke larger items like ribs, pulled pork, turkey, chicken, or even prime rib—almost anything you enjoy.
Let’s talk BBQ

Ingredients: Chicks Rollin’ in Smoke
Note: you can use any seasoning you like.
- 2 whole chickens, about 7 lbs. each
- Butcher BBQ Bird Booster Honey Flavor
- Butcher BBQ Grilling Oil Honey Flavor
- Butcher BBQ Premium Blend Seasoning
- Butcher’s Cord
Wash chicks inside and out. Dry with paper towels.

Place your birds onto the rotisserie rod and tie the legs and wings up
Place your birds onto the rotisserie rod and use a pair of pliers to tighten the meat claws so they don’t come loose during the cook. (Just Tight, no need to Crank on them.)
Tie the wings and drum sticks down so the don’t drag or flop around during the cook with butcher’s cord. It is a good idea to check on things during your cook to be sure things don’t come loose and start flopping around. I placed everything on one of my “Bull Rack” trays for easy handling and clean up.
Your birds are done at 165* but I like 170* better because the meat flakes apart nicer.
Turn the rotisserie off and remove from grill and serve.
