Stacked up on lettuce, tomatoes and a slab of sweet onion. Then, Smoky Garlic Pepper Mayo… All with a “Kiss of Smoke”.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on one of our Grills or Smokers, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Ingredients: Jalapeno Guacamole Bacon Cheeseburger
- 2 lbs. ground beef patties, 85/15
- thick sliced pepper bacon
- 2 slices pepper jack cheese for each patty (use your favorite)
- Date Night Gourmet Steak Seasoning (Ours)
- Smoky Garlic Pepper Mayo (Ours)
- Grilled Jalapenos
- guacamole
- Condiments and buns of choice
Cooking Directions: Jalapeno Guacamole Bacon Cheeseburger
Season your patties and keep them in the fridge until it’s time for them to hit the “Hot” Grill Grates.
Tip: Burgers hold together better if they go on the grill cold.
Preheat your Grill Grates to 450* (232c) For burgers I like a grill temp from 400* to 450* for burgers. “Hot & Fast”. Light your wedgie for that “Kiss of Smoke”.
Slice your jalapenos into large flat slices, clean off the seeds and grill them to taste. I like them with a little “crisp” left in them. Set them aside until it’s time to build your burger.
With the “Hot” Grill Grates these will cook fast. I did these for 4 minutes and flipped. Another 3 minutes and I added the cheese and pulled them off the grill when it was melted.
Time to build your stack! Hit the buns with Uncle Bubba’s Alabama Sauce then just stack it up with all of your goodies.
When the burgers reach an internal temperature around 165* (72c) pull them off and let it rest for a few minutes to reabsorb their juices before serving. U.S.D.A. safe for ground meat is 165* (72c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
