Green with Envy Chili Verde, Ken has been a chili cooking expert for well over thirty years! We usually make it red and hot. But, we were craving a green chili with the heat of Serrano, red pepper flakes and jalapeno peppers and the tangy goodness of lots of tomatillos. Of course, we added plenty of fresh garlic. Pork sirloin made the meat especially “melt in your mouth” tender. As Ken loves to say” you don’t even need teeth”. Patti likes to add a bit of sour cream to take some of the zing out of the sauce.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe

Prep Time: 20 minutes
Cook Time: 4 hrs. @ 300 degrees (149c) and 30 min. @ 400 degrees (205c)
Grill: Louisiana Wood Pellet Grill
Pellets: Pacific Pellets Gourmet BBQ Pellets Rancher’s Mesquite

Ingredients: Green with Envy Chili Verde

  • 4lbs. lean pork sirloin
  • 3 large sweet onions, quartered
  • 1 28oz. can chicken stock
  • 6 jalapeno peppers
  • 6 Serrano peppers
  • 2lbs. tomatillos
  • 1 Tablespoon Chef of the Future Southwestern Rub & Seasoning
  • 20 fresh garlic cloves, or to taste
  • 1 bunch chopped cilantro, divided
  • ¼ cup red pepper flakes, or to taste
  • 1 16.7oz. bottle medium hot green salsa
  • 1 10oz. container fresh pico de gallo

Cut Pork into 1 Inch Chunks and Put Them into Your Dutch Oven

Add the Fresh Pico De Gallo the Last Hour

 Directions: Green with Envy Chili Verde

Season and sear your pork and the same time roast the peppers & tomatillos about 20 minutes at 400 degrees (205c). When cool enough to work with cut the pork into cubes and seed the peppers. Place the peppers, tomatillos, half the cilantro and a handful or two of garlic into the blender and blend until smooth. Add everything except the Pico De Gallo to an oiled Dutch oven and onto the grill. Bake/Roast for 4 hours, adding the Pico De Gallo during the last hour of your cook.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
