Citrus Pork Loin Says Tacos


Citrus Pork Loin says tacos and we love pork loin. We took a 4 pound pork loin and put it in a
Dutch oven with citrus marinade, onions, garlic and sliced tangerines. We slow smoked it for 7 hours. The pork just flaked apart with the aromas of oranges and a kiss of citrus flavor and was just screaming to be wrapped up in a tortilla. As an added treat I topped it off with Briggs True Candied Jalapenos and Ghost Pepper Sauce. Plus, adding a “Kiss of Smoke” .

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Prep Time: 5 minutes
Cook Time: 7 hours @ 225 degrees (107c)
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets:
Green Mountain Grill’s Gourmet Blend BBQ Pellets

Ingredients: Citrus Pork Loin Says Tacos

  • 4 lbs. pork loin
  • Badia Mojo Marinade (citrus marinade)
  • Briggs True Citrus Pepper seasoning, to taste
  • 1 large sweet onion, sliced
  • 6 or 8 sweet peppers, sliced
  • Handful fresh garlic cloves, (I used about 2 cups)
  • Your favorite taco fixings

Place All Your Ingredients in Your Dutch Oven

Cooking Directions: Citrus Pork Loin Says Tacos

Marinate your pork loin over night in the Mojo marinade. Using a large cast iron Dutch over spray it with cooking spray and place all your ingredients in it, adding enough marinade to fill the Dutch oven about 2 inches or so. Season the pork with the Briggs True Citrus seasoning to taste.

Preheat the grill to 225 degrees (107c) and place your Dutch oven along with your smoke tube directly onto the grill. Smoke for two hours and then cover. (Most things will not pickup any more smoke flavor after two hours)

I let go for 5 more hours until it was fork tender. It can’t get any easier than that. Keep in mind that you are not cooking by internal temperature here, (after7 hours it’s done) but you are going for “Fork Tender”.

I just pulled the meat apart with a fork and put it on a severing platter with the veggies around it.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
