Chocolate Chipotle Bacon Candy! This stuff is CRAZY GOOD and will be ILLEGAL when the food police hear about it! We’ve put a spicy twist to it to make it even more addictive. We have had it with chocolate and loved it. We even made it when we were cooking at the brewery. What about chipotle?
So, we thought we would try it and see.
What can I say? OFF THE HOOK!!! The first bite has some heat and then mellows out to a nice chocolaty smoky treat. So good. Of course, you can reduce or leave the chipotle out and just run with chocolaty bacon or make some of each.
This is a special treat. Bacon Candy is so simple to make: sweet, smoky and a little heat. Just melts in your mouth. Patti and I came to the conclusion that Bacon Candy is just plain Dangerous in a really delicious way. It is so good and rich it’s hard not to eat it all. We only ate 2 pieces each, but thought about it the rest of the day. You will be amazed by how it just melts in your mouth.…
Easy to make, too when we loaded up our Bull Racks on the Green Mountain Grill at 250 degrees for an hour. The rest is just history.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Chocolate Chipotle Bacon Candy
A Pellet Grill Recipe
Prep Time: 5 minutes to mix, few hours to blend
Cook Time: 1 hour @ 250* (122c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Fruitwood BBQ Pellet Blend
Ingredients: Chocolate Chipotle Bacon Candy
- 3 Lb. thick sliced pepper bacon
- 1.5 lbs. brown sugar
- ½ cup black pepper, or to taste
- ½ cup chipotle chili powder
- ½ cup Hershey’s cocoa powder
Directions: Chocolate Chipotle Bacon Candy
Cut your bacon in half for easier handling. Mix all the ingredients in a large bowl and then mix in the bacon.
Mix well with your hands and set it aside. The sugar will melt and as it does give the bacon a few turns in the bowl.
You’ll see the sugar will liquefy (an hour or so) and when it does mix the bacon well and you’re ready for the Bull Racks and the grill.
For easer clean up spray the Bull Racks 1st. with cooking spray (We used Duck Fat). We did these for 1 hour @ 250* (122c), but that will vary a little by the thick cut of bacon you use and how well done you like your bacon.
When the bacon is done to your taste pull it and let it COOL, the sugar glaze is HOT and will stick to you. When it is cool enough to taste you will be amazed by how it just melts in your mouth.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

How is the bacon candy stored, refrigerated? And for how long provided it last long enough to worry about length of storage?

We store them in a zip lock bag in the fridge.
They only last a week or so around here so I am clueless on how long you can store them…
