Cheesy Taco Roll Up makes a great appetizer for your tailgating or camping get togethers. An awesome addition to your taco Tuesday’s, too. We started with frozen bread dough, added lots of meat and veggies, our smoked cheeses, plus taco seasoning, to taste. Then, we rolled all the goodies inside like a jelly roll. It came out golden brown and ooey gooey with Cowboy Queso (Our Recipe).

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Cheesy Taco Roll Up
A Wood Pellet Grill Recipe

Prep Time: 20 minutes
Cook Time: 25 minutes at 350* (177c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Premium Gold BBQ Pellets

Ingredients: Cheesy Taco Roll Up

  • 2lbs. lean ground beef 85/15
  • Taco seasoning, to taste
  • 2 small sweet onions, chopped
  • 6 sweet peppers, chopped
  • ¼ cup smoked garlic, minced (See Recipe)
  • 2 cups smoked Colby-Cheddar cheese, shredded
  • 2 cups smoked pepper jack cheese, shredded
  • 2 cups smoked white cheddar, shredded
  • Sliced jalapenos, to taste
  • 2 loaves frozen bread dough (1lb. each), thawed
  • Cowboy Queso (Our Recipe)
  • Duck Fat spray (Our Store)

Roll Out Your Dough

Cooking Directions: Cheesy Taco Roll Up

In a large cast iron skillet brown hamburger. Add onions and garlic. Cook until soft.

Make and egg wash to seal the edges. Set aside.

On a floured surface roll out loaves of bread dough into 13×9 rectangle. Cover the dough with the taco meat. Be sure to hold everything about an inch from the edges so you can seal it.

Add the rest of your filling, to taste. Be careful it will grow as you’re building it.  LOL

Brush the edge with your egg wash.

Brush the edges with the egg wash and roll the dough up jelly roll style. Spray a sheet pan with the duck fat and place your Taco Roll seam side down on a sheet pan. We used one of our “Bull Rack” trays.

Brush your roll up with the egg wash and you’re ready for the grill.

Preheat the Davey Crockett (Green Mountains little Tailgater) to 350* (177c).

Bake your roll up for about 25 minutes.

To serve slice diagonally and drizzle with your Cowboy Queso.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Outdoor Oven, Lodge Sportsman’s, Brinkman and Weber. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
