
Cheeseburger Enchiladas because we love, love, love cheeseburgers. For Christmas this year Ken got a professional grade meat grinder. Patti found some chuck rolls on sale and we had fun making our own ground beef. It’s been cold here (for Ca.) and we wanted to make something a little heartier, plus Ken made us some of his awesome smoked cheese!
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. Cheeseburger Enchiladas A Wood Pellet Grill Recipe
Prep Time: 20 minutes Cook Time: 35 minutes at 350* (177c) Grill: Green Mountain Wood Pellet Grill Pellets: Green Mountain Grills Gourmet BBQ PelletsIngredients: Cheeseburger Enchiladas
- 2lbs. ground beef 90/10
- 1 28oz. can red enchilada sauce
- 1 10oz. can diced tomatoes with green chilies, drained
- 1 large sweet onion, chopped
- ½ cup fresh garlic, minced
- 8 sweet peppers, chopped
- 3 Tablespoons Date Night Doins Heat
- 2 cups green onions or shallots, chopped
- 2 cups fresh cilantro, chopped
- 1 Tablespoon ground chipotle
- 6 cups smoked shredded sharp cheddar cheese, divided
- 1 15oz. can corn, drained
- 1 6 ½ oz. can sliced black olives, drained
- Tortillas, we like flour
- Cooking spray (we use duck fat)

Cooking Directions: Cheeseburger Enchiladas
Preheat the grill to 350* (177c).In a large cast iron Dutch oven brown ground beef. Add peppers, garlic and sweet onion and sauté until soft. Stir in corn, tomatoes, green onion, olives, half of cheese and seasonings.
Spray a 9×13 baking dish with a cooking spray (we use Duck Fat) pour in 1 cup enchilada sauce.
Place ¾ cup of meat mixture on each tortilla. Lay seam side down in baking dish. Repeat until meat mixture is gone. Pour remaining sauce over filled tortillas. Sprinkle on remaining cheese.
When the cheese is melted and everything is bubbling and happy it’s time to eat!!!
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
