Buffalo Wings & Links

We had a friend coming for dinner and he made the mistake of saying that he could eat a mountain of wings. So, we thought we’d give him a chance by doing a mountain of Buffalo wings & links. We did 4 different kinds of wings and sauces and threw in some zippy hot links. If I say so myself we “Lit him up”. Before the night was over there was a lot of dippin’ in the blue cheese and Ranch dips to cool things down a bit and we went through two rolls of paper towels. Everyone was really messy and very happy. We used our Bull Racks on the Green Mountain Wood Pellet Grill/Smoker to do 12 pounds of wings and 4 pounds of links. The above picture is just half the wings. One of the fun things on this cook is that I got to use a lot of my favorite rubs and sauces.

We used some of Lumberjacks new “Mexican Heat” wood pellets. Mexican Heat is a wood pellet that has red pepper chili powder mixed right in. The red pepper chili powder is a pungent, hot chili powder with a strong bite and the flavor intensifies as it is cooked. We love the Southwestern flair it adds to all of our grilling.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Ingredients: Buffalo Wings & Links

  • 12 lbs. whole chicken wings
  • 4 lbs. chipotle hot links

Buffalo Sauce

  • 1 Bottle Country Bob’s Spicy All Purpose Sauce
  • 3 cups Louisiana Hot sauce
  • 3 Tbsp. onion soup mix (adds flavor and thickens)
  • 2 Tbsp. dried crushed garlic
  • 2 Tbsp. dried minced onion
  • 2 Tbsp. Chipotle chili powder
  • 1 Tbsp. crushed red pepper flakes
  • 1 Tbsp. Cayenne pepper
  • 1 Tbsp. coarse ground black pepper

Ingredients: Chipotle Orange BBQ Sauce

  • 1 cup Spicy Honey BBQ sauce
  • 1 cup Sweet Orange Marmalade
  • 1 Tbsp. crushed fresh minced garlic, more or less to taste
  • 1 Tbsp. Chipotle chili powder, more or less to taste

Ingredients: Wild Wings Dipping Sauce

  • 2 cups light sour cream
  • 1 cup blue cheese salad dressing, we like Litehouse brand
  • 1 cup blue cheese, crumbled
  • 1 cup green onions, sliced
  • 1 teaspoon Green Mountain Grills Roasted Garlic Chipotle Rub

Directions: Buffalo Wings & Links

Give your wings a nice dusting of rub, then onto the Bull Racks with the hot links and into the Green Mountain Pellet Grill. I like to let them sit in the smoke for 30 minutes or so. Just enough to pick up some of that good smoke flavor. You can skip this part if you are too hungry, but you’ll miss out on some fine flavor. Then, I grill them at 350 degrees (177c) for 45 minutes or so until I reach an internal temp of 165 degrees (74c) (USDA) I like 180-190 degrees (80-90c) better. The meat flakes apart real nice at 190 degrees (87c). The last 15 minutes or so I brush my sauce on them, flip them and sauce the other side. Then every 5 minutes I give another coating of sauce.

Cooking Directions: Green Mountain Wood Pellet Grill

To prepare the grill for cooking, check your pellet supply – top off or change flavors as needed. Scrape grill grates off. Set the temperature to 450 degrees and press the “Start” button. Give the grill about 15 minutes to reach temperature and the grates to burn clean.

Note: You can set the start temperature anywhere you want. I do 450 (230c) for a quick cleaning burn.

I like to smoke everything for at least 30 minutes with an hour being even better. After all the Green Mountain Wood Pellet Grill is an awesome smoker so use it for all the wood smoke flavor it will add to your food.

So after the grill comes up to temp and burns clean turn it back down to 180 degrees (87c). Place the Bull Racks directly onto the grill and just let it all hang out in the smoke and get happy for 30 minutes or so. This is referred to as “Smoking” or “Hot Smoking”, the temperature is 180 degrees (87c). 30 minutes of smoking is not enough to have any cooking effect on your wings but it is enough to open the pores so that they can pick up all the flavor of the smoke.

After 30 minutes, turn the (Feed Control) up to 350 degrees (177c) for about 45 minutes. You are looking for an internal temp around 180 – 190 (90c) pull them off, cover and let it rest for a few minutes before serving. Sauce everything the last 15 minutes of your cook so the sauce doesn’t burn. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
