Buffalo Chicken Burger, tender chicken breast that’s wrapped with a slice of thick cut pepper bacon. Grilled with our Buffalo Sauce and a “Kiss of Smoke’, fresh lettuce, tomato and red sweet onion. These are so good I am already planning on doing some more and inviting some friends over for dinner.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellet
Ingredients: Buffalo Chicken Burger
- 1 boneless and skinless chicken breast for each burger you want to make
- Thick sliced pepper bacon, 1 slice for each burger
- Chef of the Future “Cajun Rub & Seasoning”
- Buffalo Sauce (ours)
- Buns of choice
- lettuce, tomato and red sweet onion
- toothpicks (Wooden)
- condiments of choice

A Wood Pellet Grill Recipe
Directions: Buffalo Chicken Burger
This is a fun one to do. I used a meat tenderizer (Big Hammer) and pounded the thick part of the breast until I had an even thickness across it. Using an egg mold for a guide so they were all the same size I trimmed it to form a chicken patty for our burgers. Don’t worry if you don’t have an egg mold. You just need something about the size of your buns. Any glass or coffee mug will be fine to use.
Then I wrapped a slice of thick cut pepper bacon around the side and pinned it with a toothpick on both sides to hold it in place. Seasoned it with our Chef of the Future Cajun Seasoning and we are ready for the grill.
Preheat the Grill Grates to 350* (177c) and light your Wedgie for that “Kiss of Smoke”
Place your burger directly onto the Hot Grill Grates. I gave these 6 minutes and gave them a quarter turn. 6 more minutes flip them and do it again.
When you flip them add a nice coating of the Buffalo Sauce.
About 25 minutes on the grill but cooking time will vary by grills, pellets and the size of your chicken patties. So, go by the Internal Temperature.
When the chicken reaches an internal temperature 165* (74c) pull it off and build your burger.
U.S.D.A. safe for chicken is 165* (74c) & pork is 145* (63c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
