Bacon Cheddar Burger With Zesty Avocado Sauce, around here the burger is “King” I LOVE BIG BURGERS! A new burger is always a delicious adventure. We are always coming up with a new twist on a good burger. That is both fun to make and eat. We both love bacon and that’s a good building point. Thinking tonight we might add some big beefy burgers and a mound of cheddar cheese with a zesty avocado sauce to our bacon.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 10 minutes
Cook Time: 40 minutes
Grill: Royall 3000 Wood Pellet Grill
Pellets: Lumberjack Hickory
Ingredients: Bacon Cheddar Burger With Zesty Avocado Sauce
- 2 lbs. ground sirloin or 80/20 (any leaner and you have DRY BURGERS)
- ½ pound bacon, cooked limp
- 2 eggs, well beaten
- Cheddar Cheese, sliced
- ¼ cup crushed dried garlic
- ½ tsp. black pepper
- ½ tsp. Country Bob’s Seasoning Salt
- 1 cup Country Bob’s All Purpose Sauce
- Buns of choice (onion buns here)
- Condiments of choice

A Wood Pellet Grill Recipe
Ingredients: Zesty Avocado Sauce
- 1 Avocado, mashed
- 4 tsp. Fresh lime juice
- ½ cup mayonnaise
- 2 Tbsp. Fresh cilantro, chopped
- ¼ tsp. Country Bob’s Sauces and Seasonings Season Salt
- 1 Tbsp. red pepper flakes
- 1 Tbsp. garlic, minced
Directions: Avocado Sauce
Mash avocado until smooth, mix in all of the other ingredients. Chill at least 1 hour before serving.
Cooking Directions: Bacon Cheddar Burger With Zesty Avocado Sauce
Mix the beef, eggs, garlic, pepper, Country Bob’s Sauces and Seasonings Seasoning Salt and Country Bob’s Sauces and Seasonings All Purpose Sauce in a bowl. Make your patties either by hand or use a press. Tonight we did it by hand.
Ken likes the press because they’re a more uniform size. Patti likes to shape them by hand, because she likes them thick and cooked rare. Put the patties back into the fridge until you are ready to put them on. (You grill hamburger patties COLD, the patties hold together better. Unlike steak, that goes on at room temp so it cooks more evenly.)
Open the lid and set the dial to “Smoke”, after about five minutes shut the lid. Give it about 10 minutes to heat up. Patti has lined the drip pan with foil for me, it makes for easier clean up.
The Royall is a SMOKER!!! USE IT. We SMOKE everything for 30 minutes before I put any heat under it. It is just magic what the smoke does to your food.
Place burgers directly onto the center of the grill and just let it hang out in the smoke and get happy for 30 minutes or so. This is referred to as “hot smoking”; the temperature is around 150*. 30 minutes of smoking is not enough to have any cooking effect on your meat. But, it is enough to open the pores up so that the meat can pick up all the flavor of the smoke.
After 30 minutes, turn the digital control up to 350*(177c) and pull the meat off the grill.
When the grill comes up to temperature, put the meat back onto the grill and cook until you reach your desired doneness. For big burgers, like these, I like to give them about 10 minutes a side.
Add cheese and close the lid, it will melt in a minute or so. Then, prepare your bun, add your patty, and pile on the bacon and you’re set.
When the burgers reach an internal temperature around 160* (72c) pull them off, cover and let them rest for 5 to 10 minutes before serving. U.S.D.A. safe is 165* (74c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About Our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
