Alabama Spatchcocked Chicken was so good we’re glad we made two. Seasoned to perfection with Chef of the Future Honey Garlic Bourbon and our own Date Night Doins Date Night Heat. Then, we basted it with our Alabama White sauce to add another layer of zippy flavor. We served it with broccoli and mashed potatoes with added Alabama White sauce. This will be great for our picnic next week because it’s great cold, too.

The Sawtooth does a great job smoking, but when you are grilling (350* 122c) there is little or no smoke. So we gave it a “Kiss of Smoke” with Green Mountain’s Texas Blend Pellets at 350* (122c)

Mix up your Alabama White Sauce and place it into the refrigerator until ready for it.
Even better if you do this the day before you want to use it.

Generously season both sides of the chicken with your Chef of the Future Honey Garlic Bourbon Rub & Seasoning and Date Night Doins Date Night Heat to taste.

Insert your meat probe. (I used a Maverick PT-732) and place your birds onto your preheated Grill Grates, (350*, 122c). I did these flesh side down for 15 minutes, sauced it then flipped it for another 15 minutes.

So after 15minutes I flip it back to skin side up and sauce again. I did another 15 minutes browning it nicely until I reach an internal temperature around 175* (80c). I think the meat flakes apart nicer at the higher temp.

U.S.D.A. safe is 165* (72c). Keep in mind that the chicken will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer (Our Store) for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
