
Tailgating Babybacks, it’s time to be thinking about doing some camping and tailgating. We picked up some some very nice ribs and all the prep was done already. All we had to do was rub them down with our seasoning and put them on our Green Mountain Davy Crockett pellet grill for some smoke. Notice the perfect smoke ring, these ribs were tender, juicy and a real treat with a Cajun twist! And only 3 ingredients Ribs, Rub and Sauce! We served these beauties with Patti’s famous potato salad and fresh watermelon wedges.
Contrary to what most folks think ribs are easy to do and you don’t need 6 hours on the grill to do them right. Out of the refrigerator and onto your plate in less than 3 hours.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Tailgating Babybacks A Pellet Grill Recipe
Prep Time: 5 minutes Cook Time: 1 hr. 225 degrees (107c), 1 ½ hr. 325 degrees (164c) Grill: Green Mountain Wood Pellet Grill Pellets: Green Mountain’s Texas Blend BBQ Pellets
Ingredients: Babybacks Tonight
- Babybacks Ribs
- GMG’s “South Of The Border” rub
- Grandville’s Cajun Kick BBQ Jam

Directions: Tailgating Babybacks
Put a good coat of your GMG’s “South of the Border” rub onto the ribs and rub it into the meat.
Onto the grill to smoke for 1 hour at 225 degrees (107c).
Then pull the ribs off and wrap in foil.
Raise the grill temp to 325 degrees (164c). Put the ribs back on the grill for an hour.
After an hour unwrap the ribs and sauce them well. Leave the foil loosely folded so the sauce can caramelize for 30 minutes.
Your ribs will be done when you have an internal temperature of 190 to 200*.
These baby back ribs were are tender and juicy that they will have you licking your fingers.
I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.
