Wonders of Cooking with Duck Fat, Chefs around the world cook with duck fat for many reasons , the first being that it simply makes good food taste better!
We use it when we need a cooking spray or as a binder to ad another layer of flavor!
When most people think of duck fat, they think of French cuisine. It has been used in French cooking and by high-end restaurants around the world for hundreds of years.
One reason is that duck fat is nearly 51% monounsaturated fat, with 36% saturated fat and 14% polyunsaturated fat.
Because of its monounsaturated content, this form of fat does not break down or smoke away during cooking. This means it keeps its flavor and is even a healthier alternative too many other fats.
One of the most popular dishes to use duck fat to cook with is potatoes. You can boost the flavor profile of potatoes so much that they seem to become another food altogether.
Many chefs also use duck fat to create their own fresh in-house Gascony butter. This butter is named for the region in France which enjoys amazing tasting food but lower rates of heart disease. They make this with rendered duck fat and garlic cloves. You then add this preparation by the scoop or tablespoon full to soups, melt over steak, or lamb.
