A Tailgating Pizza Bar makes camping and tailgating fun for everyone. Perfect for “Personal Pizzas”. The adults like that they can get a pizza the way they like it. Fun for the kids of all ages? Let’s face it they loved that they got to build their own crazy pizzas.

We set up a pizza bar for our Green Mountain Pizza Oven insert for the little Davey Crockett “tailgater” this weekend. We made over a dozen different pizzas in every style we could think of: thin crust, thick crust, and deep dish. The only thing that can hold you back with a “Pizza Bar” is your imagination!

I have found that for me the “Dough” is the hardest part of pizza making. It’s a long drawn out process when it is much easier to buy 16-ounce premade dough balls.

So, to learn more about pizza dough I went to see a “Pizza Man”, Wes at “Jim’s Razorback Pizza” in Ft. Smith, Arkansas. He took the time to show me how he makes his dough. It’s a 3-day process! (Like I said I like to purchase my dough.) We looked at thin, deep dish, and hand tossed and he showed me how to work it into a round. It will be many years until I can spin out a round like him!!!

I purchased a dozen 16-ounce dough balls for our pizza bar.

Let me say a few things here about the GMG DC Pizza Oven. The Davey Crockett grill is a tailgater, you can pick it up and take it anywhere. So, the pizza oven is small, it can do a 10-inch pizza. That makes it perfect for “Personal Pizzas” for tailgating, parties, and camping.

The only accessory you “Have” to have is a pizza peel of some kind. You can do some awesome pizzas on the stone. They require a little more attention. We found that using a pizza pan is so much easier and with a few different sizes pans you can some really fun and fancy gourmet pizzas.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Tailgating Pizza Bar
A Wood Pellet Grill Recipe

Prep Time: To Set Up Pizza Bar: 1 hour
Cook Time: 3 to 5 minutes @ 375* (177c) grill temps, 425* (190c) +/- stone temp
Grill: Green Mountain Wood Pellet Grill “Davey Crockett” w/ the Pizza oven insert
Pellets: Green Mountain’s Texas blend BBQ Pellets

Ingredients: Tailgating Pizza Bar 

I am not going to list all the ingredients for a pizza bar it is your imagination!!! Use what you like. We used both red and a white (Alfredo) sauce. Plus, Patti mixed the two together to make a “blush” sauce.  Seven different cheeses and cheese blends. And 4 or 5 different meats. Feel free to add veggies, too. Patti likes onions, mushrooms, and spinach.

We cut our 16 oz. dough balls in half and made into rounds.

Note: Most of the cheese is grated or shredded, I did not add amounts as that will vary to your taste and the size of you pan. We used a 9-inch spring pan.

Preheat the Grill to 375* (190c) for a Stone Temp Around 425* (220c)

 

 Cooking Directions: Tailgating Pizza Bar 

I have preheated my grill to 375* (190c) giving me a stone temp around 425* (220c) +/-.

All pizzas start out the same…

You’ll see here where we did some on the hot stone. You’ll need to sprinkle some corn meal onto your pizza peel when making a pizza directly on the stone. We turned our pizzas a quarter turn about every minute. Most of these were done in about 4 minutes, a bit longer for a thicker crust.

Some we did not remove the lid, for the bigger ones we lifted the lid placed our pizza on the stone and put the lid back on. BE CAREFUL, the lid is REALLY HOT. A hot pad will not be enough protection.

For some oh the bigger pizzas we left the lid off and used the “High Heat” of the stone and shut the grill.
(Always shut the grill when doing your pizzas)

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
