We love this grill for camping and tailgating because it does the job of a big grill in a small easy to use size. Even under 5’ tall Patti can lift it! We put most of this cake together in one of our favorite cast iron skillets and one bowl. Too easy.

Skillet Pineapple Upside Down Cake A Wood Pellet Grill Recipe
Prep Time: 15 minutes Cook Time: 35 minutes at 350* (177c) Grill: Green Mountain Wood Pellet Grill Pellets: Green Mountain’s Fruitwood BBQ Pellets

Ingredients: Skillet Pineapple Upside Down Cake
- ¼ cup butter
- ½ cup brown sugar, packed
- 7 slices of canned pineapple
- ¾ cup chopped nuts, we like walnuts
- 7 maraschino cherries, stems removed
- 2 cups Bisquick type baking mix
- ¾ cup brown sugar
- ½ cup milk
- 3 Tablespoons unsweetened applesauce
- 2 teaspoons pure vanilla extract
- 2 eggs, beaten

Cooking Directions: Skillet Pineapple Upside Down Cake
Preheat the grill to 350* (177c).
In an 8” cast iron skillet melt butter and sprinkle brown sugar evenly over melted butter. You can do this on the Davey Crockett but it will be easier on a camp stove for this part.
Arrange pineapple slices on top, put a cherry in the hole. Sprinkle top with nuts.
In a large bowl beat remaining ingredients with an electric mixer for 30 seconds, then on medium for 4 minutes. A hand mixer will work if need be.
Pour batter over pineapple. You are ready for that “Kiss of Smoke”.
Place your skillet directly into the grill and bake 35 minutes at 350* (177c), test doneness with a toothpick.
When done put platter upside down over the skillet and turn plate and skillet over. This is easier than it sounds.
Let your cake cool for 5 minutes, the skillet will lift right off!!!
Cool for 10 minutes before serving.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
