Brisket Taquitos, we thought we would step away from the traditional smoked brisket you see everyone doing. I love just about anything that you can roll up in a tortilla. So, we used a few pounds of our “Tex-Mex Shredded Brisket” and make a pile of “Big Beef” Taquitos. I already want to make some more…lots more!

You can feed a lot of people with a big brisket and we’ve done 2 of them. So far, we’ve done a brisket pie, Mud Pie, tacos, burritos, enchiladas, nachos, stuffed poblanos, Machaca con Huevos and even ground a few pounds for burgers. It has been a fun week on the grill!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Prep Time: 10 minutes
Cook Time: 10 minutes
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellets

Ingredients: Brisket Taquitos 

  • 2 lbs. Shredded Brisket, (See Recipe)
  • 2 or 3 small, sweet peppers, sliced (we like the color they add)
  • Shredded cheese, of choice
  • Package of tortillas, (we like flour)
  • Oil
  • toothpicks

Toppings 

  • Sour cream, to taste
  • Cheese
  • Salsa fresca
  • Guacamole, to taste
  • Cilantro, to taste
  • Limes, sliced into wedges

Cooking Directions: Brisket Taquitos 

You’ve already done the hard stuff with making the “Shredded Brisket”. So now all you have to do is decide if you want to any more peppers and onions to the shredded beef. Most of what was there has cooked down into the sauce.

For these I wanted just “Big Beef” so I didn’t add anymore.

We used about 2 pounds of brisket for our plate of Taquitos.

Lay out your tortillas, add the Shredded Brisket down the middle to taste. I like ‘em big so I piled it on.

If you want cheese add it on top of the meat and roll the tortilla up fairly tight and pin with a toothpick. Do this until you have a stack of them.

Heat up the oil in a skillet. When it’s good and hot add your Taquitos one at a time to the “Hot” oil seam side down. As they brown roll them over to brown evenly.

When browned to taste remove them to drain onto some paper towels.

You can eat them as they are or top them with Salsa, sour cream, and/or more cheese. These are good anyway you serve them.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood, and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
