We have been looking for a house cheese sauce, something we could have on hand and be ready to use anytime. We wanted a sauce I could pour hot over something that would leave a thick coat as it cooled. Like hot fudge on ice cream. We now keep lots of this on hand. In the last few weeks we’ve used it in eggs with ham, mixed it into macaroni for a quick mac & cheese and used it as a spread on sandwiches. Makes a grate burger topping but let’s not forget nachos, Over The Top! Patti even added some diced green onions and spread it on crackers when we had unexpected friends drop by.

Patti and I tried a few things until we came up with this sauce. The neat thing is you can use the sauce as a base and change the main ingredient and go off in a different direction depending on what you want to match it with.

This Chipotle Cheddar Cheese Sauce is “Off the Hook”. Now, think about changing from sharp cheddar to say a Pepper Jack with diced jalapenos instead of chipotle. Or, maybe using Asiago cheese, or Patti’s favorite blue cheese and fresh ground black pepper. Try adding a couple of tablespoons of our Bacon Marmalade with or without the cheese.

Chipotle Cheddar Cheese Sauce

Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients: Chipotle Cheddar Cheese Sauce

  • 3 Tbsp. flour
  • 3 Tbsp. butter
  • 1 ½ cups cream (milk or half & half, if you don’t have cream)
  • 2 cups sharp cheddar cheese, shredded
  • 2 chipotle chilies, out of the can and diced
  • 2 Tbsp. crushed garlic
  • 1 tsp. chipotle chili powder

Directions: Chipotle Cheddar Cheese Sauce

Heat your skillet on low and add the butter, careful not to burn it. When the butter is melted and the flour and stir into a “roux”. Keep stirring for a few minutes to brown the flour or it will taste like raw flour.

As the roux takes on some color, slowly stir in your cream. In the video we used 3 cups of cream. I was making sauce for 4 recipes. Most times 1 ½ to 2 cups will be plenty. Add garlic and chipotles, on low heat stir until smooth. Now, keep stirring and add the cheese a little at a time until it is all melted. Ready… Let’s Eat.

About Our Recipes

We do our recipes on our patio where we have a lineup of grills, including Louisiana, Green Mountain, Memphis, Royall, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Pizza Oven, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
